Easy Enchiladas! May 6, 2010

As most of you know, yesterday was Cinco de Mayo! And I celebrate this day by eating Mexican food, because I loooooooove Mexican food! A coworker and I went to eat Mexican for lunch and I had already made plans to cook enchiladas for dinner. And it was all sooo goooood! I hunted for a good enchilada recipe most of the afternoon that would be easy and I finally just made one up in my head.

1 lb. boneless skinless chicken breasts

1 packet taco seasoning

1 cup chicken broth

1 can enchilada sauce

6 tortilla shells (I used burrito sized)

1 cup shredded cheese

Place the chicken breasts, taco seasoning and chicken broth in the crockpot. Cook on low for 6-8 hours. When done, shred meat apart with two forks.

In a glass baking dishes, pour enough enchilada sauce to coat the bottom. Take one tortilla shell at a time, fill with chicken down the middle, and roll into shape. Then place it seam-side down in the glass dish. Repeat until all enchiladas are in baking dish. Pour remaining enchilada sauce over top and then sprinkle with shredded cheese.

Bake at 350 degrees until cheese is melted and enchiladas are warmed through. Enjoy!

Lastly, there is a $25 gift card when you purchase $50 towards the Allergy 2010 Rebate. I have purchased $39.96. I was going to get Zyrtec itchy eye drops but they were out. I did get a rain check though making them $12.99 and then a $2/1 coupon. That will get me to the $50 mark and get me the $25 gift card! I will have to pay $11 more, but in the end I will have spent just over $52 and I will get back $40 between SCR and the gift card! $12 for all of this!

I basically paid for the cards (which are all very much needed.. I have 3 birthdays and Mother’s Day to celebrate next weekend!), the Off Clip-On Starter Kits, and the Swiffer Wet Jet Refill Pads! Not bad!

I apologize! It has been over two weeks since I last posted. I just have been so busy with showers and thank you cards and wedding things and putting new floors in my house! It has just been crazy! Only 41 days until THE BIG DAY! My house is a wreck, but I hope to get it straight today. I can’t stand this mess anymore! There are gifts covering my entire kitchen. I don’t know the last time I was able to cook. I haven’t seen the kitchen floor in over a week! But now it has been cleared out and I cannot wait to get in there and get it back to normal! We have had new carpet installed in all three bedrooms! And the fiance has been putting laminate wood floors in the living room and hallway.. Next up, the dining room! I will post pictures later once I make it look good again!
